Festive Menu 2020


  • Salad of warm smoked salmon, citrus braised lentils, charred fennel, caviar crème fraiche and soft-boiled quail’s egg

  • Classic tiger prawn cocktail, marie-rose dressing, pickled cucumber, and melba toast shards

  • Seared yellowfin tuna, five spiced lentil, charred cucumber and wasabi mayonnaise

  • Pan seared scallops, Jerusalem artichoke, hazelnut, and watercress salad

  • Pressed smoked ham hock terrine, piccalilli vegetables, crackling crisps

  • Carpaccio of south downs beef, truffle creamed goats’ cheese, cipolline onion and carta di musica

  • Courgette, aubergine, and porcini mushroom pressed terrine, green olive and tarragon hash, ricotta dumplings and beluga lentils

  • Smoked tomato soup, basil pine nut crumbled bocconcini mozzarella, confit baby plum tomatoes and black olive pastries



  • Norfolk bronze turkey, sage, chestnut, and date stuffing. Served with traditional vegetables and all the trimmings

  • Smoked and slow cooked south downs beef tenderloin, osso bucco potato galette, wilted leaf spinach and glazed chantenay carrots

  • Cannon of south downs lamb, mini shepherds pie, mini pea puree, and savoy cabbage.

  • Pine roasted sea trout, puffed barley and textures of fennel and sea purslane

  • Pan seared fillet of halibut, roasted crown prince squash, charred chicory, cep mushrooms and black garlic puree

  • Truffle cauliflower and smoked cheddar mac ‘n’ cheese charred asparagus, buttermilk fried shallot and ceps

  • Taleggio cheese, walnut and spinach strudel, butternut squash puree, charred spinach, and artichokes


  • Black cherry and amaretto Christmas pudding, rum custard, brandy butter and cherry compote

  • Date and walnut sticky toffee pudding with malted milk ice cream​

  • Classic vanilla baked Alaska with lemon verbena strawberries

  • Honey roasted Braeburn apple and bramble, calvados cream meringue Eton mess with green apple sorbet

  • White and dark chocolate mousse with a passionfruit and mango rocky road. (passionfruit sorbet, meringue, honeycomb, marshmallow, charred and dried mango)
